Instructions

To press, layer a cotton towel and paper towels on a cutting board, place the tofu, top with more paper towels and another towel, then set a second board or baking sheet on top and weigh it down. Press for at least 15 minutes, up to 1 hour, to remove excess moisture.
  2. Pour the chile sauce into a shallow bowl and the panko into another. Coat each tofu slice in the chile sauce, then press into the panko so it adheres.
  3. In a large nonstick skillet, heat half the oil over medium. Fry half the tofu until golden and crisp, about 3 minutes per side. Remove and repeat with the remaining oil and tofu.
  4. While the tofu cooks, bake the sweet potato fries according to package directions or your preferred method until crisp.
