Start by unrolling one sheet of puff pastry and cutting it in half across the middle. Spread green pesto on the top half and red pesto on the bottom half. Place the second sheet of pastry on top, aligning the edges and pressing gently so the layers stick together.

Use a star-shaped cutter to cut out multiple stars. The example here uses a 6cm cutter, but any similar size will work—larger or smaller stars will change the wreath’s look but not its flavour.

Pesto spread onto the pastry sheets.

To form the wreath, draw a circle on a sheet of parchment paper using a large dinner plate as a guide. Arrange the pastry stars around the circle, overlapping them slightly so they form a continuous ring. Brush the tops with egg wash (or milk if you prefer an egg alternative) and sprinkle with grated Parmesan.

Bake at 200°C fan for about 15 minutes, or until the wreath is puffed and golden. Let it cool briefly before serving. You can present the wreath on the parchment paper you baked it on or transfer it to a board or plate—some stars may separate when moved, but they’re easy to reassemble into the wreath shape.

A large white plate is being drawn around to make the wreath template.

Recipe FAQs

Egg alternative – If you’d rather not use an egg, brush the pastry with milk to help it colour in the oven.

Pastry offcuts – Save the scraps: bake them on a separate tray for delicious little bites.

Serving – The wreath looks great straight from the oven on its parchment paper, or transferred to a serving board. If stars come apart during transfer, simply tuck them back into place.
