With our days getting busier, now is an ideal time to have a simple, healthy snack ready. These Peanut Butter Snack Bites are quick to make, portable, and satisfying—perfect for hectic days filled with work, school, and activities.
It’s easy to give in to the convenience of fast food when you’re on the go, but a little preparation goes a long way. Keep a batch of these bites in your fridge or freezer and you’ll avoid unnecessary calories, extra carbohydrates, and the time spent waiting in line.

These bites have saved me money and time by keeping me from stopping for fast food between errands. Kids love them too—they’re a great lunchbox addition.
Peanut Butter Snack Bites
This recipe uses only three wholesome ingredients: peanut butter, maple syrup, and coconut flour. Here’s how to make them and a few tips for best results.

Start with creamy, all-natural peanut butter without added sugar. If oil has separated at the top, stir it back in so the texture is smooth. I buy jarred peanut butter for convenience and consistent creaminess.
Use pure maple syrup rather than pancake syrups with added sugar. Real maple syrup is thinner than commercial pancake syrups, but it provides the right sweetness without processed sugars.
Coconut flour rounds out the recipe and keeps it gluten-free. It absorbs moisture and helps the mixture firm up so you can shape the bites.
No Baking Required
One of the best things about this recipe is that there’s no baking—just mix, chill, and shape.

Measure the peanut butter, maple syrup, and coconut flour into a bowl. Whisk until the mixture starts to thicken, then use a silicone spatula to fold until fully combined. If the peanut butter is hard to scoop, a push-style measuring cup or a small silicone spatula makes the job easier and reduces waste.

Chill the mixture in the freezer for 15–20 minutes to firm up slightly. Then use a 1 or 2 tablespoon scoop to portion the bites—2 tablespoons makes a satisfying snack that helps curb hunger. Place scooped balls on a wax-paper-lined tray, then return the tray to the freezer for 20–30 minutes until they’re firm.
How To Store
After freezing, transfer the bites to an airtight container. They can be stored in the refrigerator for snacks throughout the week or kept in the freezer for longer storage. I often make a double batch: keep half in the fridge for immediate use and store the rest in the freezer to pull out as needed.
