Ingredients

 

  • 2 1/2 cups Riced Cauliflower
  • 2 eggs, beaten
  • 1/4 cup cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 cup shredded cheddar cheese
  • 1-2 tsp chopped chives or green onion
  • 2 slices bacon pre cooked
  • 1 tsp olive oil for baking sheet

Instructions

 

  • Preheat oven to 350 degrees F (175 C).
  • In a large bowl, mix the riced cauliflower, beaten eggs, 1/4 cup cheddar, and garlic powder until evenly combined.
  • Line a baking sheet with parchment paper and lightly grease it with olive oil.
  • Spread and flatten the cauliflower mixture into a rectangle about 1/4 inch thick, keeping the thickness even.
  • Bake for 25–30 minutes, until the base has dried slightly and the edges are lightly browned.
  • Remove from the oven and sprinkle with shredded cheese, chopped chives or green onion, and the cooked bacon.
  • Return to the oven for another 3–5 minutes, until the cheese is melted and bubbly.
  • Remove, let cool briefly, then slice and serve.
