I love this Sausage & Tater Tot Breakfast Casserole! It’s simple to assemble and bakes while everyone gets ready for the day.

This is one of those hearty weekend breakfasts my husband loves. It’s perfect for busy mornings and holiday brunches because you can put it together quickly and let it bake while everyone prepares for the day.
Recently I hosted a relaxed holiday brunch for family to meet our new puppy, Kirby, and this casserole was a hit. If you want to save time in the morning, brown the sausage the night before or use leftover cooked sausage — that’s really the only prep that takes any effort. Otherwise, just layer the ingredients in a dish and bake.

Here’s a straightforward version of the recipe with easy steps and basic ingredients. It serves about six and reheats well if you have leftovers.
Sausage and Tater Tot Breakfast Casserole

This hearty breakfast casserole is easy to prepare and ideal for weekend mornings or holiday brunches.
Ingredients
- 6 breakfast sausage links, cooked and cut into thirds
- 16 oz. frozen tater tots
- 8 eggs, lightly scrambled
- 1/2 cup shredded cheddar cheese
- 1 clove garlic, minced
- 2 oz diced green chiles
- 1/2 small onion, finely chopped
- 1/2 cup milk
Instructions
- Preheat oven to 375°F. Spray a casserole dish with non-stick cooking spray.
- Place the cooked sausage pieces and frozen tater tots in the casserole dish in an even layer.
- In a medium bowl, whisk together the eggs, milk, cheese, garlic, diced green chiles, and chopped onion. Pour the egg mixture gently over the tater tots and sausage so it distributes evenly.
- Bake for 45–50 minutes, or until the eggs are fully set and the top is golden. Let rest a few minutes, then garnish with chopped green onion if desired and serve.
