Nutella Pull-Apart Bread Recipe: Gooey Chocolate Hazelnut Loaf

Pull apart bread takes a little patience and care during assembly, but the result is absolutely worth it. Each slice holds its own filling, so everyone gets a perfect portion of chocolate-hazelnut and cinnamon sugar.

Nutella Pull Apart Bread

Ingredients

Dough;

  • ¼ Cup Butter, Melted (55g)
  • 1 Cup Lukewarm Milk
  • 2 Tbsp. Sugar (25g)
  • 1 Tbsp. Active Dry Yeast
  • 1 Large Egg
  • 2 and ¾ Cups High Grade Flour (or Bread/All Purpose Flour) (330g)
  • 1 teaspoon Salt

Filling;

  • 1 Cup Nutella (296g)
  • 2 Tbsp. Cinnamon
  • ¾ Cup Brown Sugar (140g)

Instructions

Dough;

  • In a small bowl, combine lukewarm milk, melted butter, sugar and yeast. Set aside for 5 minutes to activate the yeast.
  • In the bowl of a stand mixer fitted with the paddle attachment, place the flour and salt.
  • Add the yeast mixture and egg. Mix on low until the flour is mostly incorporated.
  • Switch to the dough hook and mix on medium until the dough pulls away from the sides of the bowl. The dough should be soft and slightly sticky but not cling to your hands.
  • Transfer to a lightly greased bowl, cover with a towel and let rise in a warm spot until doubled in size, about 1 hour.

Filling;

  • While the dough rises, mix the cinnamon and brown sugar in a small bowl and set aside.
  • Gently warm the Nutella until spreadable and set aside.

Assembly;

  • Grease a 9×5-inch loaf pan. For easier removal, line the pan with a strip of parchment so the ends hang over as handles.
  • Punch down the dough and turn onto a floured surface.
  • Roll the dough into a large rectangle about 10″ by 20″.
  • Spread the melted Nutella evenly over the rectangle. Add more if you prefer a thicker layer.
  • Sprinkle the cinnamon-sugar mixture over the Nutella, reserving about 2 tablespoons to top the loaf later.
  • Cut the dough into 8–10 strips along the 20″ length so each strip is about 10″ long. Stack the strips gently into a single pile.
  • Cut the stacked strips into three equal piles. Arrange those piles on their sides in a row in the prepared pan so the layers are visible.
  • Sprinkle the reserved cinnamon sugar over the top. Cover and let rise in a warm place until nearly doubled, about 30–40 minutes.
  • Preheat the oven to 180°C (350°F). Bake the loaf for 30–35 minutes until golden and hollow-sounding when tapped. If the top browns too quickly, tent with foil and continue baking.
  • Cool in the pan for 15 minutes, then run a knife around the edge and lift the loaf out using the parchment handles. Transfer to a rack to cool completely before slicing and serving.
