Andy and I prioritize quality family time, and many of our happiest moments happen poolside with the kids. On sunny days like these, I love preparing simple, refreshing treats. This easy Strawberry and Cream Pop recipe is one of our favorites — imagine strawberry cheesecake in popsicle form.

These pops are fun and straightforward to make, and they’re perfect for involving kids — have them help toss strawberries into the blender or stir the mixture. I sampled a few spoonfuls (admittedly more than a few) and couldn’t stop — the creaminess comes from using full-flavored cream cheese, which really makes the texture indulgent. Using quality ingredients like real cream and milk elevates the flavor, and simple aromas can create lasting memories for little ones.

Ingredients

  • Makes 8 pops.
  • 3/4 cup sugar
  • 8 ounces cream cheese, softened
  • 1 1/4 cup evaporated milk
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 7 tablespoons light-colored corn syrup
  • 2 teaspoons lemon juice
  • 2 cups strawberries, chopped and hulled

Instructions

  • In a saucepan over medium heat, cook the sugar with the evaporated milk for a few minutes until the sugar dissolves.
  • Slowly pour the warm milk and sugar mixture into a bowl containing the softened cream cheese, whisking until smooth. Stir in the vanilla and Greek yogurt until well combined.
  • Place the strawberries, lemon juice, and corn syrup in a blender and blend until smooth.
  • Fold the strawberry puree into the cream cheese mixture and stir until the color is uniform.
  • Pour the combined mixture into popsicle molds and freeze until solid, about 4–5 hours.
  • To remove the pops, submerge the mold in a bowl of warm water for 10–15 seconds to loosen them, then gently pull out each pop.
