Instructions

  1. Place 12 Ritz crackers (bottom side up) on a parchment-lined baking sheet. If using peanut butter, spread a thin layer on these crackers. Top each with four mini marshmallows or a spoonful of marshmallow creme. If you’re using mini marshmallows, toast them under the broiler briefly until lightly browned, then top with the remaining crackers to form sandwiches.
  2. Melt the chocolate wafers in the microwave in 30-second intervals, stirring between intervals, or melt them in a double broiler over medium-low heat until smooth.
  3. Stir the chocolate until fully smooth. Using a fork or spatula, coat each cracker sandwich evenly with melted chocolate, covering all sides. Transfer the coated sandwiches to a parchment-lined baking sheet.
