The Big Mac Meat

I use 85% lean ground beef for a good balance of flavor and fat. You can choose leaner or fattier meat, but note that fattier beef shrinks more and may require blotting with paper towels to remove excess grease after cooking. If you prefer, ground turkey can be substituted; it will change the texture and flavor slightly but still makes tasty mini burgers.

Form the meat into two flat rectangles on a cookie sheet that are slightly larger than the dinner rolls so the patties still cover the buns after cooking and shrinking. Keep thickness even for uniform cooking.

  • 1 package of 12 dinner rolls
  • 2 lbs ground beef
  • 1 small yellow onion, minced fine
  • 12 slices Kraft American cheese
  • 1 cup shredded lettuce
  • 12–15 dill pickle slices
  • 1/3 cup Thousand Island dressing
  • 2 eggs, whisked
  • 1 tbsp toasted sesame seeds
  • 1 tbsp melted butter
  • 2 tsp salt (or to taste)
  • 2 tsp garlic powder (or to taste)
  • 1 tsp black pepper (or to taste)
  • 2 tbsp minced onion (or to taste)

Instructions

  1. In a bowl combine ground beef, minced onion, salt, pepper, garlic powder, and whisked egg. Mix gently—just until combined. Adjust seasonings to taste.
  2. Divide the meat into two portions. Press each portion into a flat rectangle slightly larger than six dinner rolls laid out in two rows of three.
  3. Place both rectangles on a cookie sheet, sprinkle a little extra minced onion on top if desired, and bake at 350°F (175°C) for about 12 minutes. Oven times vary—check for doneness.
  4. While the meat cooks, split the two sets of six buns so you have bottoms and tops ready.
  5. Spoon about two tablespoons of Thousand Island dressing on each bottom bun and spread evenly.
  6. When the meat is done, blot excess grease with paper towels. Place each patty section onto six bun bottoms and spread additional dressing over the patties.
  7. Unwrap cheese slices and lay them across the patties. Return the tray to the oven just until the cheese melts—this takes a minute or two.
  8. After cheese melts, add minced onion, pickle slices, and shredded lettuce to each burger. Top with the bun lids.
  9. Brush the top buns with melted butter and sprinkle with sesame seeds.
  10. Cut the large patty into individual sliders and serve warm. Enjoy!
