This recipe grew from a simple college trick: placing chicken breasts in a dish, pouring Italian dressing over them, and baking. Over time I added vegetables and perfected the foil packet method — now it’s a go-to for busy families.

Gather a pound of boneless skinless chicken breasts, a few colorful peppers, an onion, garlic, fresh basil, Zesty Italian dressing and aluminum foil. Cut foil into sheets large enough to wrap each breast. Place a chicken breast on each sheet, add the vegetables, spoon on dressing, seal the packets and bake.

The result is a quick, healthy and fragrant dinner with minimal fuss. Serve the packets right from the oven for an easy family meal. ENJOY!

Italian Chicken and Vegetables In Foil
Ingredients
- 4 aluminum foil sheetslarge enough to wrap one chicken breast each
- 4 boneless skinless chicken breast halves(about 4 ounces each)
- 4 teaspoons olive oil
- salt and fresh ground black pepperto taste
- 2 cloves garlicchopped
- 1 yellow onionthinly sliced
- 1 red bell peppercut into thin slices
- 4 baby carrotscut into thin slices
- 4 basil leaves
- ⅓ cup Zesty Italian dressing
Instructions
- Preheat oven to 375°F (190°C).
- Place one chicken breast on each sheet of foil.
- Drizzle about 1 teaspoon of olive oil over each chicken breast and season with salt and pepper.
- Arrange chopped garlic, sliced onion, bell pepper and sliced carrots on and around each chicken breast.
- Place a basil leaf on top of each portion.
- Spoon a couple of tablespoons of Zesty Italian dressing over the chicken and vegetables.
- Fold the foil sides over the chicken to fully enclose each packet and seal the edges.
- Transfer the foil packets to a baking sheet and bake for 35 to 40 minutes, until chicken is cooked through.
- Carefully open the foil packets and place them under the broiler for about 3 minutes to brown slightly, if desired. Remove from broiler.
- Serve the chicken and vegetables warm, either in the foil or plated. Enjoy.
