Below you’ll find a clear ingredient list, step-by-step directions, and helpful tips to ensure success every time.

I’ve used the Instant Pot for many recipes and love how quickly dinner comes together. This pulled pork is no exception — it’s great year-round and gives you that sweet, smoky sandwich flavor without needing a smoker.

Whenever you’re craving a pulled pork sandwich, this pressure-cooked version gives you fall-apart tender meat with a deep, satisfying flavor. The method is straightforward: season, brown, add liquid and smoke flavor, then pressure cook until meltingly tender.

Ingredients
- 3.5 lb boneless pork picnic (pork shoulder/Boston butt works best)
- About 1/2 cup pork rub (use a blend of brown sugar, paprika, garlic powder, onion powder, salt and pepper)
- 1 tablespoon vegetable or olive oil
- 3/4 cup chicken stock or water
- 2 teaspoons liquid smoke
Directions
- Unwrap the pork picnic, rinse, and pat dry with paper towels.
- Cut the pork into pieces that will fit comfortably in your Instant Pot.
- Generously coat each piece with the pork rub, massaging the spices into the meat.
- Set the Instant Pot to Sauté and wait until the display shows HOT.
- Add the oil and brown the pork pieces on all sides. Transfer browned pieces to a bowl as you go. When finished browning, press Cancel to turn off Sauté.
- Pour the chicken stock (or water) into the pot and stir in the liquid smoke.
- Return the browned pork pieces to the Instant Pot and secure the lid. Make sure the steam release valve is set to the sealed position.
- Select Manual (or Pressure Cook) and set the time to 90 minutes on high pressure.
- When cooking completes, allow the pressure to release naturally for about 20 minutes before carefully opening the lid.
- Check the pork — it should be very tender and easy to shred with forks. If it’s not quite there, reseal and cook under pressure for an additional 10–20 minutes.
- This recipe yields about 8–10 servings.
How Long to Cook Boneless Pork Picnic in a Pressure Cooker?
Cooking time varies by the weight and thickness of the pork. For a 3.5 lb boneless pork picnic, 90 minutes on high pressure followed by a natural release of about 20 minutes produced fork-tender, shreddable meat. Thicker or larger roasts may need extra time; if the meat isn’t falling apart after the first cycle, simply pressure cook in 10–20 minute increments until tender.

Pro Cooking Tips
- Choose the right cut: Pork shoulder (Boston butt or picnic roast) has the marbling needed for tender pulled pork.
- Use a flavorful rub: Brown sugar, smoked paprika, garlic and onion powders, salt and pepper create a classic base — coat the meat generously.
- Add liquid: At least 3/4 cup of liquid prevents burning and creates the steam needed for pressure cooking. Broth, apple juice, or even beer add different flavor notes.
- Cook on high pressure: High pressure breaks down connective tissue, producing tender meat that shreds easily.
- Let it rest: A natural pressure release (about 15–20 minutes) helps the meat relax and finish tenderizing in the residual heat.
With a little patience, your Instant Pot will reward you with juicy, flavorful pulled pork perfect for sandwiches, tacos, salads, or a quick dinner.
