A blondie is essentially a chewy bar cookie—thick and dense like a cookie but baked and served like a brownie. They’re easy to make and wonderfully portable. I baked these in a 9×13-inch pan for a thinner, more shareable blondie. If you prefer a taller, fudgier bar, bake in an 8×8-inch pan instead and add several minutes to the baking time.

How to Balance Sweet Funfetti Blondies
To keep these blondies from getting cloyingly sweet, I used a generous teaspoon of coarse sea salt (I sometimes add two teaspoons). The salt helps balance the brown sugar and the white chocolate chips for a richer, more rounded flavor.

Instructions

Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment and spray lightly with non-stick baking spray.

In a stand mixer fitted with the paddle attachment, beat the butter and brown sugar on high until light and fluffy, about 2 minutes.

Add the egg, egg yolk, vanilla, and almond extract. Beat on high for another 2 minutes until well combined.

Mix in the flour, salt, and baking powder until just combined; do not overmix.
