This recipe grew from a simple college trick: placing chicken breasts in a dish, pouring Italian dressing over them, and baking. Over time I added vegetables and perfected the foil packet method — now it’s a go-to for busy families.

Gather a pound of boneless skinless chicken breasts, a few colorful peppers, an onion, garlic, fresh basil, Zesty Italian dressing and aluminum foil. Cut foil into sheets large enough to wrap each breast. Place a chicken breast on each sheet, add the vegetables, spoon on dressing, seal the packets and bake.

Italian Chicken and Vegetables In Foil

Ingredients

  • 4 aluminum foil sheetslarge enough to wrap one chicken breast each
  • 4 boneless skinless chicken breast halves(about 4 ounces each)
  • 4 teaspoons olive oil
  • salt and fresh ground black pepperto taste
  • 2 cloves garlicchopped
  • 1 yellow onionthinly sliced
  • 1 red bell peppercut into thin slices
  • 4 baby carrotscut into thin slices
  • 4 basil leaves
  • cup Zesty Italian dressing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place one chicken breast on each sheet of foil.
  3. Drizzle about 1 teaspoon of olive oil over each chicken breast and season with salt and pepper.
  4. Arrange chopped garlic, sliced onion, bell pepper and sliced carrots on and around each chicken breast.
  5. Place a basil leaf on top of each portion.
  6. Spoon a couple of tablespoons of Zesty Italian dressing over the chicken and vegetables.
  7. Fold the foil sides over the chicken to fully enclose each packet and seal the edges.
  8. Transfer the foil packets to a baking sheet and bake for 35 to 40 minutes, until chicken is cooked through.
  9. Carefully open the foil packets and place them under the broiler for about 3 minutes to brown slightly, if desired. Remove from broiler.
  10. Serve the chicken and vegetables warm, either in the foil or plated. Enjoy.
