No-Bake Peanut Butter Cookies

Ingredients
- 1/2 c. butter
- 1/2 c. cold milk
- 2 c. granulated sugar
- 1/2 c. peanut butter
- 1 T. vanilla extract
- 3 1/2 c. quick cooking oats

Prepare two baking sheets by lining them with parchment paper; set aside.

In a heavy-bottomed saucepan over medium heat, melt the butter. Whisk in the cold milk and granulated sugar, stirring until combined and the mixture comes to a boil.

Once it reaches a boil, continue boiling for exactly 1 minute. Use a timer — hitting this time is important for the right texture. Remove the pan from the heat.

Stir in the peanut butter and vanilla extract until the peanut butter melts completely and the mixture is smooth.

Using a wooden spoon, fold in the quick-cooking oats until they are evenly coated. Drop the cookie mixture by rounded 1 1/2 to 2 tablespoonfuls onto the prepared parchment-lined sheets.

Let the cookies cool at room temperature until set. They will firm up as they cool; to speed this process, place the sheets in the refrigerator until the cookies are fully set.
