Ingredients

  • 1/2 c. butter
  • 1/2 c. cold milk
  • 2 c. granulated sugar
  • 1/2 c. peanut butter
  • 1 T. vanilla extract
  • 3 1/2 c. quick cooking oats

Instructions

  • Prepare two baking sheets by lining them with parchment paper; set aside.
  • In a heavy-bottomed saucepan over medium heat, melt the butter. Whisk in the cold milk and granulated sugar, stirring until combined and the mixture comes to a boil.
  • Once it reaches a boil, continue boiling for exactly 1 minute. Use a timer — hitting this time is important for the right texture. Remove the pan from the heat.
  • Stir in the peanut butter and vanilla extract until the peanut butter melts completely and the mixture is smooth.
  • Using a wooden spoon, fold in the quick-cooking oats until they are evenly coated. Drop the cookie mixture by rounded 1 1/2 to 2 tablespoonfuls onto the prepared parchment-lined sheets.
  • Let the cookies cool at room temperature until set. They will firm up as they cool; to speed this process, place the sheets in the refrigerator until the cookies are fully set.
