What is a Fan-assisted Oven?

A fan-assisted oven—also called a convection, fan-forced or electric fan oven—uses heating elements at the top and bottom plus a fan to circulate hot air. This promotes more even cooking and often reduces cooking time.

Fan ovens are particularly good for roasting and achieving crisp results, and they let you cook on multiple shelves without compromising evenness.

Do Americans have fan-assisted ovens?

Many American home ovens are not convection models, so when using US recipes you may need to convert temperatures. Adjustments are straightforward using the tables above.

What is a Conventional Oven?

A conventional oven heats the air inside using top and bottom elements without a circulating fan. The bottom element is typically used for general cooking and baking, while the top element helps with browning and crisping.

For delicate bakes like sponge cakes, many bakers prefer conventional mode to avoid excessive circulation that can affect texture.

What oven do we use?

Our recipes are tested using a Britannia fan-assisted electric double range oven. We also use a gas oven when cooking on the road in our motorhome, and our recipes are checked on a variety of appliances by friends and family.
