Ingredients

  • 1 Block Extra-firm tofu
  • 2 tsp. Tamari or soy sauce (use tamari for gluten-free)
  • 2 tsp. Liquid smoke
  • 2 tsp. Poultry seasoning
  • 1 tsp. Garlic powder
  • 1 1/2 tsp. Smoked paprika
  • 1 tsp. Salt
  • Black pepper, to sprinkle on top

Instructions

  • Preheat the oven to 450°F (230°C). While it heats, press the tofu between paper towels with a weight on top for about 10 minutes to remove excess moisture.
  • Add the pressed tofu and all seasonings except the black pepper to a food processor. Blend on high, scraping the bowl as needed, until the mixture is completely smooth. This can take a few minutes.
  • Line a baking sheet with parchment paper. Scoop the tofu mixture onto the sheet and smooth it with a spatula. Place another sheet of parchment on top and roll the mixture out with a rolling pin to an even thickness.
  • Roll until the layer is very thin and even — about 1/8 inch thick is a good target. If your sheet is small, use two baking sheets so you can spread it thin enough.
  • Remove the top parchment, sprinkle black pepper and a bit more smoked paprika over the surface if desired.
  • Bake at 450°F for 12–17 minutes, or until the tofu is firm and slightly browned on top.
  • Remove from the oven and let cool. Cut into circles, squares, or rectangles as you prefer. Use immediately for sandwiches or store the slices in the refrigerator wrapped or in a bag for later use.

Notes

For thicker slices, bake a little longer.

When you remove the top parchment, some mixture may stick — this is normal and won’t affect the flavor.

If the spread is too thin it may crack during baking; it will still taste good even if the appearance isn’t perfect.
